Would a winery(process) be classified as a hazardous area under art 500? By produsts are ethanol.

Have the local Fire Inspector & Building Inspector make the call.

Depends on quantity and if it is in containers etc. See Class I Division II locations.

If this is a new building the plans should list the classification.

If this is real wine I would say no. The ethanol will always be in concentrations too low to be flammable. If this is one of those places that mixes grape juice with pure grain alcohol, calling it wine, you would have something to worry about.
