Which is better to use for overhead low voltage lighting, the individual transformers for each light? Or one main transformer to control all the lights? How does controlling from one trans work anyway?

I would think that it would be a matter of preference. If you are controlling from one Xfrmr, then figure out how much load you will be putting on it, and get one that will stand up to it. If using individual for each light, then they will mostlikely be smaller. Also, if controlling from one Xfrmr, then be sure to size the wire to take into account for voltage drop, and increase in current.
