This is a rule of thumb for sizing kitchen exhaust fans from broans website....

Recommendations for Ventilating Exhaust Fans
Kitchen 15 air chg/hr L x W x 2 = CFM
Example for a 10' x 10' kitchen:
10' x 10' x 2 = 200 CFM

If I were doing it,I would go with an inline fan mounted up in the attic. It would be alot quieter.
