Pardon me if this seems like a stupid question but is there any danger of damaging a commercial dishwasher whose nomenclature reads 1 phase 208 volts by supplying it with 240 volts???

That's more than 15% over the rated voltage.

That's nominal voltage as well -- If the 240V supply is running near the upper end of its allowable tolerance then it will be even more.

Would it be possible to install a transformer to buck the voltage down a little?
It would be possible but I don't know how practical. I'm not familiar with this type of equipment. Would it fit behind the dishwasher? Do you know of a company I could contact about such a "step down" transformer?
