I would like to learn more about what type of LV lighting is available. Good brands, what to be aware of and how to correctly install it.

Is there a web site that may contain info on this stuff?

Seen some at HD today that had a trans with two 60W outputs and included five 20W lights. Noticing there were only 5 lights for a 120W trans, is that because of derating the of the trans? Why not six lights? Seemed to be an OK setup but looked kinda consumerish((?)I made a new word!)
Would an electrical supply house carry something like this?

Do you have to follow code to installing boxes for connections to terminate in or what? It's only 11.5V according to the box so it seems that it would not have to be wired as regular house wiring is.

This will be installed under and in some new kitchen cabinets.

It is a pretty good sight.
Also track-lighting.com.(include the dash).
The installation instructions for a recently purchased set of button lights(hockey puck?)to illuminate the interior of kitchen cabinets direct you to use the supplied wire nuts to make the interconnections. No box required. I will surface mount the fixture on the inside, drill a small hole for the wire and splice above the cabinet(no soffit), running the lv wire across the top front of the cabinets to the next fixture.

GE makes a good line of low voltage lighting for commercial and industrial applications. There are other manufacturer's out there. If you don't find what you want, send an email and I will contact a local rep.
Home Depot and Lowe's have some low voltage stuff but probably not much help on applications.

There is NEC Article 411 covering low voltage lighting and UL standard 2108.
My first recommendation would be a UL Listed product.
