Should I memorize the buck/boost schematics, or is this something that I should just keep handy as a reference so that when I bump into it I can just call on the corresponding schematic for the correct wireing? And then over time just let it become as routine as running a 3way switch?

Memorise where you keep the drawing!

Like I tell my students; don't try to memorise the NEC, just know where to find what you're looking for

There must be at least a dozen different ways to connect buck boosts.

I agree with John, just remember where in the truck you keep the diagrams.
