It's been awhile since I worked in a Class 2, Div 1 area and I need to select an enclosure for a PLC and an HMI. Any thoughts on which enclosures would fit the bill here?

Getting the PLC into a hazardous enclosure should solve one problem, but the HMI is going to be an issue.
Unless you can find an HMI that is listed for that environment (like the ones from HMI Elements or AIS) you're going to be stuck.
In order for an HMI to work you'll need to touch it so putting it inside an enclosure with its face exposed won't work very well.
