would you all consider the interior of a refrigerator in a typical mom and pop market to be a damp or wet location? using emt to wire fluorescents. would you use raintight connections? boxes, devices, luminaires inside?
110.11, 310.8, 314.15[370-15], 410.4 seem to point that way. and 358.10C & 358.42 [348-6 & 10] say to use raintight fittings if a wet location.

I'm not sure about your specific application but I always use the rain tight connectors on commercial refrigeration (walk-in coolers and freezers) due to the high moisture.

Call for fixtures listed for damp locations.
