I need to calculate loads to install a distribution panel fed from a transfer switch.
I have a 200a,
175a
150a
125a breakers all three phase.
None of which the branch circuits draw anywhere near the breaker size. Ineed to put these breakers with their circuits into one panel to be fed from a tranfer switch which of course will be rated accordingly. I know I just don't add these up.

What are the actual loads?

The size of the breakers does not provide you with the needed information. You need connected load, name plate data from the equipment connected, clip on amp readings on each phase and any other info you can get.
After accumulation of the information you can make a decicion as to what size equipment you will need. Add 25% for future load. Its possible that the old load has been removed and the present breakers size
is not required

As suggested, you will need to compile Panel Schedule[s] and do a Load Calc [like the NEC Service Feeder load calc].
