Can someone explain a couple of things to me on this nameplate info for a convection oven:

TOTAL KW = 5.5KW

208, 240v 3 Phase Loading - KW per Phase:
L1-L2 = 2.5, L2-L3 = 0 , L1-L3 = 3Kw

Nominal Amps per line wire:
3 Phase 208 Volt
L1 =23, L2= 10, L3=12

Why is there unbalanced loads per phase and how would you choose a cable wire size with all the different amperages? Would you base cable wire size on the largest - 23 amps? Would you use a 3 pole 30 amp breaker?

The unbalanced current is the result of single phase fan motors and controls.

Yes you must select a cord and branch circuit with at least a 23 amp capacity.

L2-L3 = 0 kw...why no load b/w 2 and 3?

With no load between L2-L3 it would be very easy to convert the oven to work on a 2 wire single phase supply.
