so if you can get next to a stud, is it acceptable to screw a box to the stud with sheetrock screws? or do you have to make a big enough hole to secure a bracket type of box?

Richard, if you can secure the box to the stud you have it made. There is no specific criteria I know of beyond

thanks guys, i just want to do the right job, and not "this is the way it has always been done". new work construction is a lot easier, in that you can build your support if the stud isn't where the customer wants his device. but with old work, it is sometimes hard to convince him(or her) that they will have to get someone to spackle and paint for that one outlet in the dining room, and the paint is hard to match, etc....
